One coffee streusdal cake

Serves 8
100g melted butter and extra for greasing
275g plain flour
1tbsp baking powder
75g caster sugar
150ml milk
2 eggs
2tbsp instant coffee mixed with a bit of water
Topping _ 75g sr flour
75g brown sugar
2tbsp butter diced
Mixed spice to taste

Grease and line a cake tin i use a largish one!
Sieve together the baking powder and plain flour and stir in the caster sugar
Whisk the milk, eggs, melted butter and coffee together and pour onto the dry mix then pour into the tin
To make the topping mix the sr flour and brown sugar rub in the butter to make breadcrumbs (my fave bit) put in the mixed spice (i put in about a dessert spoon but you may want less) then sprinkle evenly over the top of the cake
Bake in a preheated oven 190c
/ 375f or gas mark 5 for about an hour then when you can serve immediatly or add some icing sugar

I love baking!
